Why Cosmos Wood Fired Pizza Is A Must-Try In Lansing

I realized that I was running out of time to finish everything on the “Top 19 Things to Do While Visiting Lansing” list. When it comes to Cosmos Wood Fired Pizza, I’ll just say I saved the best for last. 

Located on Larch Street at the edge of Old Town, Cosmos Wood Fired Pizza has an eclectic menu of regionally inspired items and is a favorite of locals and visitors alike. Established in 2015 and featured on an episode of Diners, Drive-Ins and Dives with Guy Fieri just three years later, Cosmos Pizza has built a strong reputation for using locally sourced ingredients, crafting inventive flavor combinations, and consistently delivering a quality product."

The “Trust Us” Pizza is one of the menu items that continues to drive the reputation of the restaurant. Changing daily, your taste buds are at the mercy of the chef. You’ll never know what the toppings will be until it hits the table. For those trusting types, Cosmos Wood-Fired Pizza also offers a “Trust Us” Vegan pizza, Doughnut Holes, and Mocktail options.

I’m a product of the X-Files generation...I trust no one, but I did order something that was different than my usual pizza flavor profile: The Pear. Cosmos’ thin pizza crust topped with mozzarella, blue cheese, crispy pancetta, sliced pears, mixed greens, and a maple vinaigrette. I was glad I ventured out of the pizza box. It was an intriguing union of flavors.  

Uneducated palate of mine aside, I enjoyed checking Cosmos Wood Fired Pizza off the “to-do” list. I definitely recommend it. I’ll be back next time through Lansing. I may even gamble on the “Trust Us” line-up. Maybe.
