Lansing's food scene is ever evolving and ever changing. Sometimes that change is for the worse, like the loss of a local restaurant. Sometimes that change is for the better, like the addition of a new restaurant.

A New Restaurant is Coming to Lansing

This time it's for the better, because we have another addition to look forward to!

Lansing's food scene is going to be growing with the addition of a new burrito place.

Lansing, say hello to Bubbakoo's Burritos.

If you've driven west along Saginaw near Frandor recently, you might have seen the signage up on the windows of the former Big John Steak & Onion (closed in November 2024) that it's going into.

Bubbakoo's Burritos is a fast-casual eatery that serves up a fusion of Mexican, Asian, and America flavors, making for some pretty interesting flavor combinations.

They serve up loaded fries with a variety of toppings; Nashville fries come with curly fries, Nashville chicken, queso, and pickles. While the Birria fries come with curly fries, Birria, onion, cilantro, and queso. They, of course, serve up burritos, like the hibachi steak and shrimp, or the Gochujang crispy chicken burrito. Along with quesodillas, bowls, salads, nachos, and more.

When Will Bubbakoo's Burritos Open in Lansing?

There's no word just yet on when they might open. While the window cling reads, "coming soon", there was no indication on their website on when "soon" might be.
