I like good food, good service and great ambience. As I'm well into my forties, I like getting dressed up once in a while and taking my wife out for a nice dinner. It's not uncommon for me to wear a sportcoat, no worries men, there's really no dress code for the following restaurants. Business casual will be suffice.
When organizing a fancy date night, or any date night for that matter, know your date's tastes. If he/she loves steaks, go to a steakhouse. Perhaps seafood is something special to your date. Check out the menus before you make reservations to make sure that there is something yummy on the menu for him/her. That's easy for me, I know my wife's tastes well. If you've just started dating, be cordial and ask what he/she would love for dinner. Heck, if it's not a surprise share the menu with that person. No need to overthink it.
Service is important. Although I haven't been to a couple of the following restaurants, Dusty's and the English Inn have great service. I would assume the other resaurants have great service too. Bowdie's is the old Knight Cap, I haven't been to Bowdie's but I hear that the food and service are impeccable.

Visit them in downtown Lansing, 320 E Michigan Ave, Lansing, MI 48933. Start with scallops, enjoy the tomahawk ribeye and enjoy one of their many cocktails. I'm still trying to go visit them. I'll stick with the N/A options from the bar, they look good.
Take the short drive to Eaton Rapids, they are located at 677 S Michigan Rd, Eaton Rapids, MI 48827. I have been here a few times within the past year. This place is amazing. Service is top notch, the ambience is hard to beat. Make it super fancy and stay at the Inn for the night. Anything on the menu is awesome. The prime rib is some of the best.
For a tasty, fancy dinner experience, head to 1839 W Grand River Ave, Okemos, MI 48864. Their menu is seasonal, check their website out. The service is good, the menu is flavorful. The lighting sets the mood. Try their gazpacho during the summer.
East Lansing has some fancy dining at 115 Albert St, East Lansing, MI 48823. I haven't been here. The word on the street is it's amazing food! The menu has options like Black Cat Poutine, blackened tilapia and truffle mac and cheese.
How about a fancy dinner in downtown Lansing, try Envie at 210 S Washington Square, Lansing, MI 48933. Things standing out on the menu to me include New York strip chili, seafood risotto and duck benedict. The presentation is strong in the photos. If the service and food match up, this place looks top notch and very fancy.
