May 30 was indeed the last day for this restaurant and brewery, which closed at the end of operating hours. This is less than a year after its opening in July 2024.
Why is SaltRock Brewing CO. Closing?
The owner, Steve Kelly, said that closing the restaurant wasn't an easy decision, but there wasn't a way for the restaurant to survive on the business it was receiving. Kelly told LSJ, "We just didn't have the business we thought we would. It was a steady decline. It wasn't anything that was instant."

At the time of writing this article (Tues. May 3), SaltRock Brewing CO. hadn't posted about the closure to their Facebook or website.
