New Bakery Opening in East Lansing with Mind-Blowing Cakes

Another eatery is coming to Lansing this year!

Lansing's Big Year for Restaurants

So far, 2025 has seen a huge increase in eateries, with approximately 30 restaurants, cafés, and bakeries opening their doors in the first half of the year. And there are still plenty more to come.

One such place is a bakery that just announced its opening: Not So Bland Cakes.

Not So Bland Cakes Opening a Storefront

Jessica, the owner, posted an announcement to her business Facebook page as well as to the 517 Living Community Greater Lansing, MI Facebook group. She's super excited about this next step in her business.

Not So Bland Cakes creates a variety of desserts available for purchase, ranging from cupcakes to cookies to cakes and a bunch of stuff in between.

One of her specialties is making hyper-realistic/deceptive cakes. Take a look at THIS hyper-realistic cake she recently completed.

She's catered for weddings, birthdays, and other big life events. Now, she's going to have her own storefront.

When and Where Will Not So Bland Cakes Open?

As of right now, there's no word on exactly when Not So Bland Cakes will be open. At the moment, Jessica is a short distance away from meeting a financial goal to open.

Not So Bland Cakes plans on opening somewhere in East Lansing along Grand River Avenue.

In the mean time, if you would like to try the items that Jessica is baking up, she'll be one of the vendors at A Festival of Oddities in Charlotte, Saturday, August 30 and Sunday, August 31.
