The Lansing food scene has experienced unprecedented growth this year, and we still have more restaurant openings to go.

Two of those upcoming restaurants include RJ's Burgers & Ice Cream, as well as Eiffel Waffle in East Lansing.

RJ's Burgers & Ice Cream Co. is an eatery that originally hails from Jackson, Michigan and serves up burgers, fries, ice cream, "crazy shakes", and more. The grand opening of this second location is planned for Tuesday, December 9 at 1388 E Grand River Ave. This is located at the former Rite Aid in the Brookfield Plaza.

Owners Robert and Yvette Wilkie say their restaurant came from "the pain of losing Robert Wilkie Jr. less than two weeks after he was born in 2011." They took their grief and turned it into a sense of purpose, and that led to the creation of RJ's Burgers & Ice Cream. The grand opening will coincide with what would have been RJ's 14th birthday.

Eiffel Waffle Creamery is a dessert chain that is bringing its first Michigan location to East Lansing on Bailey Street, just north of E Grand River Ave. This eatery serves up a very distinct-looking bubble waffle, along with house-made ice cream, smoothies, and more.

Originally, franchise owner Awais Ahmad had hoped to open Eiffel Waffle Creamery by mid-November. However, it appears that they are finishing up some work and the grand opening will be slightly later. Hopefully we'll see this unique business open its doors before the end of the year.
